2. Black Fungus and Pork Liver Soup
Ingredients: 5g black fungus, 180g pork liver, 1 slice ginger, 2 red dates, pinch of salt
Method:

(2) Wash the pork liver, ginger, and red dates separately. Slice the pork liver; peel the ginger; pit the red dates and set aside.

3. Braised Grass Carp with Black Fungus
Ingredients: 100g black fungus,Grass carp fillet 250g, Vegetable oil 300ml (actual consumption approx. 50ml), Minced scallions, minced ginger, Shaoxing wine, ground pepper, cornstarch slurry, salt, chicken broth, MSG to taste
Method:
(1) Remove stems from rehydrated black fungus, rinse thoroughly, and drain well;Rinse fish fillet, slice thinly, place in a bowl with Shaoxing wine and salt.
(2) Marinate fish briefly. Remove slices, coat with wet starch mixture, set aside.
(3) Heat wok over high heat. Add vegetable oil until 70% hot. Quickly stir-fry fish slices until cooked through. Remove and drain oil.
(4) Heat wok over high heat. Add remaining oil until hot. Stir-fry minced scallions and ginger briefly. Add fish slices and black fungus. Pour in Shaoxing wine and pepper powder. Stir-fry rapidly for a moment. Add broth and MSG.
(4) Heat remaining oil in wok over high heat. Add minced scallions and ginger to stir-fry briefly. Add fish slices, black fungus, and Shaoxing wine. Stir-fry rapidly for a moment. Pour in broth and bring to a boil. Thicken with slurry. Season with salt and MSG. Toss a few times. Sprinkle with ground pepper. Plate and serve immediately.
