【Method】
1. Peel onion and dice into 1cm cubes.Mince the garlic.
2. Sauté the tomatoes in oil until they release their juices. Pour in the tomato juice and simmer until thickened.
3. Cut the dried bamboo shoots and potato into 1cm cubes.
4. Heat olive oil and garlic in a pot. Once fragrant, add the ground beef and stir-fry.
5. Add the onion, bamboo shoot cubes, and potato chunks. Stir-fry until everything is coated in oil. Pour in the broth, cover the pot, and simmer for 20 minutes.
6. Finally, pour in the tomato juice. Season with salt, then simmer for another 15 minutes. Transfer to a serving dish.
