1. Soak the pomelo in hot water for about 5 minutes, then wash and dry thoroughly.Maintain water temperature around 65°C (149°F)—hot but not scalding. Soaking opens the skin pores for easier cleaning, peeling, and pickling.
2. Thinly scrape off the outer yellow-green peel with a knife, minimizing the white pith (bitter taste). Slice the peel into fine strips—the thinner, the better.Then lightly salt it—this is the key to the pomelo's expectorant and cough-suppressing properties.
3. Peel out the flesh, remove seeds and membranes, then mash with a spoon or break apart by hand—it's very easy to separate.
4. Place the grapefruit peel, pulp, and rock sugar in a clean pot (preferably non-stick). Add one bowl of water and bring to a boil over high heat. Once boiling, reduce to low heat and simmer until thick and sticky, with the peel turning golden and translucent. Stir frequently to prevent sticking. This takes about an hour. Remove from heat when only a small amount of liquid remains when scooped with a spoon. Let cool.
5. Once the thickened grapefruit syrup has cooled to about 65°C (143°F), stir in honey until well combined (wait until the paste has cooled to avoid destroying honey's nutrients with heat). 1 pomelo, 1 lemon, 250g rock sugar, 250g honey.
Steps
1. Rub the pomelo surface thoroughly with salt for 5 minutes to remove wax. Rinse off salt residue with warm water.Thinly peel off the yellow outer rind, avoiding the white pith.
2. Soak in lightly salted water for at least 8 hours (ideally changing the water twice) to remove bitterness. Break the grapefruit flesh into small pieces and dice the lemon. Process both into a fine paste using a food processor.
3. Slice the grapefruit peel into very fine shreds—as thin as possible. Place the pulp mixture and peel shreds into a non-iron pot. Add rock sugar. Bring to a boil over high heat, then reduce to low heat and simmer. Stir frequently with a wooden spoon to prevent sticking.
4. After 40 minutes, the pomelo jam should become thick and bubbly. When a spoon swirls through it, the pulp should not immediately close back up. Turn off the heat and let it cool.
5. Once the grapefruit tea has cooled to room temperature, stir in honey until well combined. Transfer to a clean, dry, grease-free jar, seal tightly, and refrigerate for 4 days before using to make tea.

2 grapefruits, 1 teaspoon salt, 2 tablespoons sugar,1 bottle honey

1. Peel grapefruits, remove inner membranes and pith, reserving only the segments.
2. Layer sugar and salt over segments; thoroughly press pulp with a large spoon to release all juices. Marinate for 20 minutes.
3. Heat a small pot over medium heat; add marinated grapefruit and simmer, stirring constantly until liquid thickens to a syrupy consistency. Remove from heat.
4. Once completely cooled, stir in 10-30g Jiatang Western Flower Honey. Serve sweetened to taste.Stir constantly until the liquid thickens into a syrupy consistency, then remove from heat.

Notes
1. Grapefruit has a naturally bitter taste. Remove all white pith thoroughly to avoid affecting the flavor.
2. Adding salt helps reduce bitterness and has a slight preservative effect.
3. Avoid using a blender to grind the pulp, as this damages water-soluble fiber. Instead, crush it with a spoon.
4. Use medium-low heat during cooking.Monitor timing closely and remove from heat immediately upon thickening.
5. Honey is heat-sensitive and loses nutrients when heated. Always add honey only after the grapefruit mixture has cooled completely.
