First, soak the dried noodles in water at 50 to 60 degrees Celsius for 10 minutes until softened.Then, bring another pot of water to a boil. 1. Soak dry glass noodles in 50°C to 60°C water until softened.
2. Combine sesame seeds, minced ginger, garlic paste, chopped celery, Sichuan pepper powder, MSG, chicken bouillon, ground black pepper, salt, soy sauce, vinegar, sesame oil, and chili oil in a bowl.
3. Add broth, chopped scallions, and lard to form the base.

Simmer gently over low heat.In a separate pot, heat vegetable oil and stir-fry bean paste until fragrant, then add minced ginger. Once the meat is tender and the broth has developed color, remove impurities three times until the broth is perfected.
