Actually, yogurt can be consumed warm.The concern about heating yogurt stems from the fear of destroying its most valuable lactic acid bacteria. Boiling or steaming yogurt kills its abundant active lactic acid bacteria, alters its physical properties, causes separation and sedimentation, and diminishes its flavor and texture, thereby reducing its nutritional value and health benefits. However, gently warming yogurt does not kill the lactic acid bacteria; instead, it enhances their activity, amplifying yogurt's unique health effects.
However, yogurt warming must be limited in duration and conditions. Yogurt inoculation occurs after pasteurized milk is rapidly cooled to approximately 45°C. When using a mixed starter culture of Lactobacillus bulgaricus and Streptococcus thermophilus, maintain a temperature of 41°C to 42°C for 2.5 to 4.0 hours (with a 2% to 4% inoculum rate), halting fermentation once the mixture reaches a solidified state.The fermented, solidified yogurt should be immediately transferred to a cold storage unit maintained at 0°C to 4°C. This rapidly inhibits lactic acid bacteria growth, preventing further fermentation and increased acidity. Store-bought yogurt is typically refrigerated and should not be consumed directly in winter. To warm it, place the container in lukewarm water around 45°C, gently swirling it as it heats. Once it feels comfortably warm to the touch, it is ready to drink.
