Sweet and Sour Carp is a traditional specialty of Jinan, Shandong. Located north of the Yellow River, Jinan boasts carp that are not only plump and tender but also feature golden scales and red tails, making them visually appealing and a favored banquet dish.The Jinan Prefecture Annals records as early as the Tang Dynasty that "Yellow River carp and Nanyang crabs" were featured in local cookbooks. It is said that sweet and sour carp originated in Luokou Town, a major Yellow River port. Local restaurants gained fame by preparing this dish with live carp, which later spread to Jinan.The cooking method was perfected: the fish was first deep-fried until cooked, then coated with a sauce made from renowned Luokou aged vinegar and sugar. The result was a dish with an enticing aroma, crispy exterior, tender interior, and tangy flavor. It soon became a celebrated specialty, with the version from Jinan's Huiquanlou Restaurant being the most famous.They keep live Yellow River carp in ponds within the courtyard, allowing customers to select their fish on the spot. Sweet and Sour Carp Recipe
Ingredients: 1 carp, 200g flour, 50g sugar, 15g tomato sauce, 50g vinegar, scallions to taste, 4g pepper powder, ginger to taste, 10g cooking wine, 5g salt, 15g cornstarch, 10g light soy sauce.
Method:
1. Mix sugar, vinegar, and water in a 2:1:2 ratio to make the sauce.
4. Make peony-style cuts on both sides of the fish, spaced 2.5 cm apart. To do this, first make vertical cuts 1 cm deep.
5. Then make horizontal cuts 2 cm deep.
6. Marinate the cut fish in light soy sauce, salt, cooking wine, and pepper for 30 minutes to infuse flavor.
7. Mix cornstarch and flour into a batter, then evenly coat the marinated fish.
8. Heat oil to 70% heat. Lift the fish by its tail, briefly fry the head first, then use a ladle to pour hot oil over the fish.
9. Once the batter sets, slowly lower the fish into the oil.
10. Fry until cooked through, then remove.
11. When oil reaches 80% heat, refry the fish. Ladle hot oil over the fish until crispy, then plate.
12. Reserve a small amount of oil in the wok. Sauté chopped scallions, minced ginger, and minced garlic until fragrant. Add prepared sauce and tomato paste.
13. Thicken the sauce with a little wet starch.Pour over the fish and serve immediately.
