Animal studies on mice indicated that tart cherry powder reduced inflammation, body fat levels, weight gain, and blood cholesterol levels in rodents.
2. Researchers at the University of Michigan recently extracted anthocyanins from cherries and tested their effects on insulin-producing pancreatic cells isolated from rodents. Exposure to anthocyanins increased insulin production by these cells by 50%.In one case, insulin production nearly doubled after exposure to the most active anthocyanin.
