Method for Stir-Fried Snails
After purchasing snails, keep them in a basin of clean water for two days. Add a few drops of soybean oil to the basin. Trim off the pointed tail end of each shell or remove the cap. This not only makes it easier to extract the meat when eating but also allows flavors to penetrate better during cooking.
Ingredients: Snails, perilla leaves, satay sauce, minced garlic, fermented black beans (small amount).
Method:
1. Heat wok until smoking hot. Add oil, then stir-fry minced garlic, perilla leaves, satay sauce, and fermented black beans until fragrant.
2. Add the snails and stir-fry continuously. Splash in boiling water, season with salt, and cook until fully done. 3. Thicken the sauce with cornstarch slurry, add finishing oil and sesame oil, mix well, and plate.

Snails----Trim off the tail ends, wash thoroughly, and set aside.

Red chili pepper, dried chili peppers - cut to desired size

Heat the wok without oil. Add snails and stir-fry until many suction cups detach. Transfer to a bowl. Season lightly with salt during stir-frying.

When many suction cups detach, transfer snails to a bowl and set aside. Add a pinch of salt during stir-frying. Clean the prepared dry-pot pan, heat it, pour in salad oil, then add one star anise. Once the star anise releases its aroma, add chopped ginger, garlic, and dried chili peppers. Stir-fry for 5-6 turns, then add sliced red chili peppers,along with white scallion sections. Sprinkle a pinch of salt, stir-fry until fragrant, then set aside. Next, pour an appropriate amount of salad oil into the wok. Add the snails and the same star anise used earlier. Stir-fry together. Add rice wine, soy sauce, and a small amount of water. Then pour the previously stir-fried chili mixture over the snails. Do not stir; let it simmer with the wine.When the liquid has reduced by half, add perilla leaves, chicken bouillon, a pinch of sugar, and a splash of aromatic vinegar. Stir-fry for about ten to eight times. At this point, you should smell the rich aroma of the snails.
